Our Beef is hand selected to suit customer requirements from a range including Wagyu, Black Angus, MSA graded beef through to grain and grass fed stock. We age all of our beef to ensure it is at it’s best as this allows the natural flavours to become intensified and for the meat texture to soften giving a more consistent product. Once this aging has taken place your order is then portion controlled to your requirements ensuring you achieve the best possible margins then vacuum packed for product integrity.

Red meat (beef, lamb and veal) is an important part of a healthy diet and contains a unique bundle of nutrients essential for good health. This is why the Australian Dietary Guidelines and the Australian Guide to Healthy Eating recommend we enjoy lean red meat 3-4 times a week.

Wagyu

Wagyu has a softer fat which improves the meat flavour and taste. The improvement is due to the higher ratio of mono-unsaturated fatty acids to saturated fatty acids. This results in a ‘healthier’ eating product. Wagyu is a breed of cattle originating in Japan and carries exceptional marbling and flavour. It’s numbers are growing in Australia today to meet the growing demands of discerning beef consumers.

Black Angus

Angus are known throughout the world for their ability to consistently produce the finest high quality beef. The superior meat quality of Angus cattle comes from their ability to lay down intra-muscular marbling (taste) fat during the finishing phase, together with excellent tenderness, texture, flavour , meat colour and fat colour.

MSA

MSA is a valuable asset to the Australian beef industry, providing opportunities to differentiate product in the market. Unlike existing industry description systems, MSA accurately predicts eating quality for individual beef muscles.

The complex series of factors which result in the eating quality of a beef meal are taken into account in the MSA production and grading process. This solves the longstanding consumer problems of selecting beef and choosing an appropriate cooking method.
